Smokey Roasted Red Peper Dressing on Sweetcorn and Lettuce

A jar of roasted red peppers is a sound investment. I’ve blended some with some smoked paprika and a little garlic and seasoning and made a Spanish style dressing. Tinned sweetcorn is also a great thing to have in your tined food armoury. These are from Sainsbury’s basics range. I suspect that they are grown by the same farmer in the same field and tinned in the same factory. The difference being the the kernels aren’t a unifom size – like if anyone cares! This isn’t Masterchef.


  • Salad leaves
  • A tin of sweetcorn, fresh is better if it’s in season, if not tinned will do
  • A jar of roasted red peppers
  • Smoked paprika
  • Garlic
  • Crutons


  1. Add a couple of red peppers and half a table spoon of smoked paprika a drizzle of olive oil and half a garlic clove and blend into a sauce.
  2. Pile your salad leaves and sweetcorn onto a plate.
  3. Pour over your red pepper dressing.
  4. Sprinkle with croutons.
