Snow Noodles

After a couple of months eating cold weather food, soups, stews, roasts etc. your taste buds start to think they’ve been deported to a Russian Gulag. Let’s set those buds free AND take them on holiday! Come on taste buds, grab your sun glasses, we’re off to Shanghai!


  • Warm cooked noodles
  • Finely chopped spring or red onion
  • Grated carrot
  • Coriander leaves
  • Something green like green beans, broccoli or in this case finely chopped little gem lettuce
  • Toasted crushed peanuts
  • Black sesame seeds

The Dressing:

  • Rice wine vinegar
  • Soy sauce
  • Sesame oil
  • Lime juice
  • Finely minced ginger
  • Finely minced green chilli
  • Runny honey


Mix the warm noodles with the salad ingredients in a large bowl and pour over the dressing. Mix with your hands and pile into serving bowls. Sprinkle with your sesame seeds and toasted peanuts. Make more dressing than you think you’ll need, it can be stored in the fridge for ages and is great on fish-finger butties.
