Warm cooked noodles
Finely chopped spring or red onion
Something green like green beans, broccoli or in this case finely chopped little gem lettuce
Toasted crushed peanuts
Black sesame seeds
Rice wine vinegar
Finely minced ginger
Finely minced green chilli
Mix the warm noodles with the salad ingredients in a large bowl and pour over the dressing. Mix with your hands and pile into serving bowls. Sprinkle with your sesame seeds and toasted peanuts. Make more dressing than you think you’ll need, it can be stored in the fridge for ages and is great on fish-finger butties.
